Quince, Thyme & Rosemary Jam for Cheese


You may wonder, what is quince? It is a fruit that resembles an apple or a pear that is completely inedible when raw but that becomes sweet and luscious when cooked. It is very popular in Mediterranean countries like France, Spain and Portugal. In Spain, it is called "membrillo" and is made into a paste to accompany cheeses like Manchego. It is similar in flavor to "guava paste".

In my opinion, it makes for a wonderful cheese pairing. This particular jam made by a French Master Cheesemaker is sweet, earthy and subtly aromatic thanks to its thyme and rosemary.

This jam is made in Southwestern France in the midst of France's finest orchards by Favols, a producer of award-winning jams and fruit preserves for more than 40 years. 

Tips: Excellent paired with Roquefort and other blue cheeses like Gorgonzola.

Ingredients: Quince (45%), cane sugar, gelling agent: fruit pectin, concentrated lemon juice, concentrated currant juice, thyme and rosemary (0.06%).
