Espelette Chili Mayonnaise


This Provençal mayonnaise has a nice kick. It is called "Rouille" in French, which means "rust" in reference to its color, and it is delicious as a sandwich spread, a burger spread, or as a substitute for regular mayonnaise. It pairs particularly well with fish and seafood dishes.

In the South of France it is served as an accompaniment to a dish called "Bouillabaisse", a stew made with different types of Mediterranean fish and shellfish, combined with olive oil, tomatoes and saffron. The "Rouille" is served on the side with some homemade croutons to garnish this exquisite specialty.

This chili mayonnaise is made by "les Délices du Luberon", a family-run manufacturer located in L'Isle-sur-la-Sorgue that specializes in Provençal cooking and authentic Mediterranean flavors.
